Capers are flower! When the flower dies, a bulbus berry is left behind and inside are the capers. The capers range in size from teeny tiny to slightly smaller than a chickpea. They are graded by size and packed in salt or brine.
The smaller the caper, the more intense the flavor. Nonpareils from Southern France are the most sought-after, with a delicate texture and powerful aroma.
These delicate buds are hand-picked early morning before they open, making them a labor of love. Each tiny bud is carefully dried in the sun and then brined or salted, developing an incredible mustard oil flavor that creates those signature white crystalline spots.
The Super Nonpareilles are the teeniest tiniest and so packed with flavor. We only have these a few times a year, and the time is now! They always sell out fast!
